This method is perfect for weeknight dinners or when you want to impress your guests without spending hours in the kitchen. The result is crunchd gold.

The Ingredient Breakdown

Certain components are required for this to work. Do not substitute cabbage. Don’t skip the vinegar.

For salad base:
– 1 apple
– 1 pear
– 1 radish
– Cabbage (as much as you want, don’t be shy)
– 1 red cabbage
– 1 handful of walnuts
– 1 handful of fresh mint
– 1 handful of fresh basil

For the Dressing:
– 1 tablespoon of mustard
– 1 tablespoon of honey
– 3 tablespoons of grapevine vinegar
– 5-6 tablespoons of olive oil
– 1 clove of garlic
– salt and black pepper

Step-by-Step Preparation

Let’s start with cabbage. This is where most people rush and it shows. Cut the white cabbage and red cabbage as thinly as possible. Fine shreds are better than chunks here. The cabbage should just wilt a little under the dressing instead of resisting it.

Sprinkle the chopped cabbage with a pinch of salt. Rub it gently with your hands. This removes the harsh dress and softens the fibers. To stop the process, rinse quickly under cold dress and drain completely. The wet cabbage dilutes the dressing. Dry cabbage lets the flavor in.

Now prepare the rest. Chop the mint and basil. Crush the walnuts lightly. they don’t need to be dust, just break it into manageable pieces. Cut the radish into small cubes.

Be careful with fruit. Cut the apples and pears in half. No need to peel. Skin adds color and crunch. Remove the core. Cut the fruit into matchsticks the same width as the shredded cabbage. Uniformity matters for every bite.

Mix everything together in a large bowl. Sprinkle the walnuts on top. They should be visible, not buried.

Prepare the oil vinegar dressing

Do not dress the salad until you are ready to eat it. Here is why. If you wait too long, the acids in the vinegar will start to break down the fresh herbs, causing the cabbage to wilt. Keep it separate until the last second.

In a separate bowl, combine the mustard, honey, grapevine vinegar, minced garlic, salt and pepper. Stir until the honey has dissolved.

Next, add the olive oil. Do this slowly. Pour in a thin strip, stirring constantly. You are emulsifying. The oil and vinegar should be bind into a creamy, thick consistency. If you pour it all at once, it will separate and slide off the leaves. Continue adding until the dressing coats the back of a spoon.

Pour the dressing over the salad. Toss it well. Taste it
