Making oven-baked yufka pasta: classic, creamy and comforting taste

There’s something special about turning a humble material into something like a hug. You know the type. It’s not about fancy presentation or expensive meat. It means putting pantry staples like pasta, yogurt, eggs, and thin sheets of dough known as yufka into a golden, bubbling pan that smells like home.

Most people like cooked pasta in tomato sauce or garlic butter. But if you want to liven up a weeknight meal, oven-baked yufka pasta is the answer. It’s creamy and holds together perfectly, creating a contrast of textures that just boiling can’t provide.

I will explain how to do it step by step. No need to guess. Only real food.

The Ingredients You Need

Before you heat the oven, gather what you need. This size is the standard size for families.

  • 250g bowtie pasta (or any smaller pasta you have on hand)
  • 2 pieces of ready-made yufka (thin sheets of dough)
  • 1 tea glass of flower oil (vegetable oil) or olive oil
  • 1 tea glass of yogurt (or milk if you want a lighter taste)
    *3 large eggs
  • 1 cup of crumbled cheese (any processed cheese will do; add feta or similar salty cheese for a nice touch)
  • small bunch of fresh parsley chopped
  • Salt and black pepper to taste

Step by step: Making oven-baked yufka pasta

The steps are simple, but timing is critical. The pasta should be cooked but firm and the egg mixture emulsified before heating.

1. Cook the pasta correctly
First, cook bowtie pasta in plenty of salted water. Do not overcook. You want it al dente. When the timer goes off, drain the pasta and rinse immediately with cold water. Soak in cold water for about 10 minutes. This stops the cooking process and prevents the noodles from sticking later. Drain it well.

2. Prepare the binder mixture
While the pasta is cooling, prepare another bowl. Crack in your three eggs. Mix thoroughly. Add yogurt (or milk), oil and season with salt and pepper. Blend again until the mixture is smooth and even. This creates a creamy base that binds the pasta and cheese together in the oven. Set it aside.

3. Assemble the Layers
Preheat the oven. When it heats up, lightly grease the baking sheet with oil. Lay down one sheet of yufka.

In a large bowl, sprinkle chopped parsley over the pasta. Add crumbled cheese. Pour in a little more than half of the egg mixture. Mix everything together until the pasta, cheese and herbs are evenly coated.

Spread this mixture evenly over the first sheet of yufka in the baking tray. The layers should be even and uniform.

4. Seal and Bake
